    00:00:00.080 --> 00:00:04.710
>> My name's Jason Cervantes, I'm general
manager at Rock'n Fish in Manhattan Beach.

    00:00:04.710 --> 00:00:08.110
You know, I arrive at work and try
and acclimate myself to how the--

    00:00:08.110 --> 00:00:12.240
what the vibe is like, what the energy's
like, that can go a lot of different ways.

    00:00:12.240 --> 00:00:16.020
But, essentially look at the books for the night
and see what reservations we're looking like,

    00:00:16.020 --> 00:00:19.720
see if I have any bigwigs coming in or anything.

    00:00:19.720 --> 00:00:20.830
You look at the reservation notes,

    00:00:20.830 --> 00:00:24.550
see if there's anything you
need to pay close attention to.

    00:00:24.550 --> 00:00:30.490
Make sure the money's all lined up from the day
before, look at sales, see how sales for this--

    00:00:30.490 --> 00:00:33.040
for whatever day around this year
how that compared to last year,

    00:00:33.040 --> 00:00:34.760
see what the week's looking
like compared to last year,

    00:00:34.760 --> 00:00:40.980
see if there's any special events we have
coming up soon that we have to prepare for,

    00:00:40.980 --> 00:00:45.350
make sure staff is all appropriately lined up
for the day, make sure nobody's called in sick

    00:00:45.350 --> 00:00:49.280
and if somebody's call in sick make sure I
cover that, make sure the facility's all clean

    00:00:49.280 --> 00:00:57.280
and well-maintained and all the machinery's
in good working order, and if something's not,

    00:00:57.280 --> 00:00:59.450
make sure I get people in
and line people up to fix it.

    00:00:59.450 --> 00:01:03.980
If it's my office day, then
there's invoices to code,

    00:01:03.980 --> 00:01:07.230
there's spreadsheets to look at and dial in.

    00:01:07.230 --> 00:01:09.210
Different people coming in to--

    00:01:09.210 --> 00:01:11.570
you know, different vendors wanting
to show me new products and stuff

    00:01:11.570 --> 00:01:16.710
that they're featuring for whatever month.

    00:01:16.710 --> 00:01:23.420
Yeah, it's always what's going on today
that I can make sure that we do tightly,

    00:01:23.420 --> 00:01:27.580
anything from previous days that we
need to work on or look at and fix,

    00:01:27.580 --> 00:01:30.780
and looking ahead to what
might be coming down the line.
